At holiday time we all do lots of entertaining. This is one of those make-ahead recipes that frees the cook to enjoy the party. The folks at the Glen Mountain Market in Watkins Glen, New York modified our recipe and served up this version for the 1997 Deck the Halls weekend. Our visitors enjoyed them with our special edition holiday wine, Delicieuse, which is no longer available. But they go equally as well with our Chardonnay or Estate White, an off dry blend of Chardonnay and Riesling.
Mix bottom half filling to spreading consistency. Add caper liquid if needed. Set aside.
In separate bowl cream butter and mix well with spinach and bread crumbs.
Split bread loaf lengthwise and scoop out center. Spread entire top half cavity with spinach mixture. Fill bottom half with cream cheese mixture, piling it up so that when top half is pressed over the lower, the space will be filled. Wrap in foil and chill well. To serve, cut into thin slices with a sharp knife. Makes 24 to 36 slices.
