Pasta Salad With Pesto

This is not your usual pesto salad. Rich and creamy with mayonnaise and sour cream, the pesto adds a little kick to this otherwise traditional summer salad. The Glen Mountain Market in Watkins Glen made this for us to serve at the Pasta & Wine weekend in June 1998. They've generously shared their own house recipe with us. Make it at home or try it with one of their hearty sandwiches the next time you are in town. Goes best with our Chardonnay.

1 pound tri-colored rotelle (spiral pasta)
1 cup chick peas, drained
1 cup chopped black olives
1 cup chopped fresh tomatoes
1/2 cup chopped roasted red peppers (from a jar or can)

Dressing

1/4 cup pesto (Use your own favorite recipe or find it ready-made in the Italian food section of your grocery store.)
1 cup mayonnaise
1/2 cup sour cream
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
1/4 cup grated Romano cheese

Cook rotelle in rapidly boiling water until al dente. Drain, rinse with cold water to stop cooking, drain well again, and cool. Add chick peas, black olives, tomatoes and roasted red peppers to cooled pasta. Combine dressing ingredients and stir into pasta salad. Chill and serve.
