Spicy Cheddar Cheese & Roasted Pepper Spread

A quick and easy cheese spread to serve on baguette slices or crackers at your next party. We handed our recipe over to the folks at the Glen Mountain Market in Watkins Glen, New York and they put their own spin on it. We served this one during Barrel Tasting Weekend in April 1998. It is especially nice served with our 1995 Chardonnay as well as our Estate White which is a blend of Chardonnay and Riesling.

1 cup finely shredded extra sharp cheddar cheese, room temperature
1 3-ounce package cream cheese, room temperature
2 tablespoons butter, room temperature
2 tablespoons white wine -- Lamoreaux Landing Chardonnay or Estate White
1 1/2 tablespoons chopped green onion
1 1/2 tablespoons chopped roasted red pepper (in a jar or can)
1/4 teaspoon Worcestershire sauce
Generous dash of bottled hot pepper sauce
1 1/2 tablespoons chopped green olives (optional - we didn't put olives in ours)
1/4 cup chopped fresh parsley
1/4 cup finely chopped nuts

Place all ingredients except parsley and nuts in medium mixing bowl. Beat with electric mixer on medium speed until combined. Cover and chill at least 4 hours or overnight. Shape into a ball or log and roll in parsley and nuts. Let stand 15 minutes. Serve with baguette slices or crackers. makes about 1 1/2 cups.
